Chocolate Mousse

Chocolate Mousse

Either pour into glasses or cool in one bowl. Serve with whipped cream.
Course Dessert

Ingredients

  • 8 oz semi sweet chocolate
  • 1/4 c water
  • 1 c egg whites
  • 1 c whipping cream
  • 2/3 c Sugar

Instructions

  • In a double boiler, melt chocolate and water together. Stir as it melts; if it is not smooth and kind of "chalky" add a bit more water.
  • When it is melted it should be smooth and a thick liquid, set aside.
  • Whip the egg whites and sugar until a thick meringue, set aside.
  • Whip the cream until stiff.
  • Fold the meringue into the chocolate and then the whipped cream.

Notes

Serving Suggestions:
Either pour into glasses or cool in one bowl. Serve with whipped cream.
Angelfood Parfait:
Break pieces of angel food cake into glasses or bowl and layer or fold with the mousse.
Mousse Parfait ideas:
Mini marshmallows Caramel sauce Toasted nuts Sliced banana, strawberries or mango
Additional Comments:
Instead of water use coffee or espresso for flavoring. Orange zest is a good addition.

Prawns, Scallops and Red Bell Peppers with Sautéed Polenta

Course Main Dish

Ingredients

  • 12 Coleson's Catch Tiger Prawns peeled & deveined
  • 20 Coleson’s Catch Scallops
  • 1 c Onions finely sliced
  • 2 c Red Bell Pepper finely sliced
  • 1/4 c olive oil
  • 1/2 c Chicken Broth
  • 1/2 c balsamic vinegar
  • Salt and Pepper

Instructions

  • In a large sauté pan caramelize the onions in the olive oil, add the red bell peppers, vinegar and chicken broth and simmer until tender.
  • Add more chicken broth if needed.
  • Dust the prawns and scallops in flour and sauté them until golden brown.
  • Combine them with the bell peppers and simmer for a minute or two.
  • Pour over sautéed polenta.

Curried Butternut Squash

Servings 2 People

Ingredients

  • 4 c butternut squash diced
  • 2/3 c chicken or vegetable broth
  • 1/2 c yellow onion diced
  • 1 Tbsp Curry Powder
  • 2 Tbsp Butter

Instructions

  • Bring the broth to a boil with the onion and curry.
  • Add the butternut squash and cover.
  • Cook until tender, add butter.
  • I like it chunky but it can also be served pureed.
  • Season with salt and pepper.

Pomegranate and Coconut Milk Ladyfinger Parfait

Course Dessert
Total Time 8 hours hours
Servings 2 People

Ingredients

  • 3 egg yolks
  • 1/3 c Sugar
  • 2/3 c Heavy Cream
  • 2/3 c mascarpone
  • 2/3 c sweetened coconut milk
  • 1/4 c pomegranate juice
  • 1 Tsp rum
  • 18 ladyfingers
  • Fresh pomegranate kernels
  • Fresh Mint

Instructions

  • Beat the yolks and sugar until thoroughly mixed. Whip the cream.
  • Fold the mascarpone into the cream and then the yolks into it.
  • Mix the coconut milk, pomegranate juice and rum.
  • Dip the ladyfingers in the liquid and layer into parfait dishes alternating with the egg mixture.
  • Garnish with fresh pomegranate kernels and mint.
  • Put in the refrigerator and let it set for 8 hours.

Basic Bread Pudding Custard

Course Dessert

Ingredients

  • 2 c Milk scalded
  • 4 eggs
  • 1 c Sugar
  • 1 tsp vanilla

Instructions

  • In a bowl whisk the eggs, sugar and vanilla-whisk the hot milk in. That is custard.
  • You can use more bowls and double boilers but in my kitchen I'll be cleaning up so I cut to the chase. Keep it simple. 
  • French bread is what I like to use. I cut it into squares put it into an ovenware dish and cover with the custard.
  • The bread likes to float so I put another dish on top to keep the bread covered.
  • I prefer to have more custard than bread.
  • Some people like it drier and add a sauce.
  • All custard likes to be cooked in a water bath, I would recommend it but you dont have to, just keep the heat down.

Let's think of some good combinations:
- Chocolate bread pudding with banana creme anglaise
- Maple bread pudding with whipped cream
- Rum raisin bread pudding with whipped cream
- Brandied chestnut bread pudding with maple syrup and whipped cream
- Mocha bread pudding with chocolate sauce
- Almond bread pudding with whipped cream and toasted almonds
